Ingredients

2 cups ripe figs, chopped

1 cup vegetable broth

1 cup coconut cream

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon honey (or maple syrup for vegan option)

Salt and pepper to taste

1 tablespoon lemon juice

Crumbled goat cheese or feta cheese for garnish (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prep the Ingredients: Start by washing and chopping the figs into small pieces. Set them aside. Dice the onion and mince the garlic.

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until they turn translucent (about 4-5 minutes). Stir in the minced garlic and cook for another minute until fragrant.

Add Figs and Broth: Add the chopped figs to the pot and stir to combine. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes until the figs are soft.

Blend the Soup: Using an immersion blender, blend the mixture until smooth. Alternatively, you can transfer it to a blender (in batches if necessary) and blend until creamy. Return the soup to the pot.

Incorporate Coconut Cream: Stir in the coconut cream, fresh thyme, honey, salt, and pepper. Allow the soup to heat through gently for about 5-7 minutes on low heat. Adjust seasoning and sweetness to taste.

Finish with Lemon Juice: Just before serving, stir in the lemon juice for a touch of brightness.

Serve: Ladle the cream of fig jam soup into bowls. If desired, top with crumbled goat or feta cheese and garnish with fresh mint leaves for added flavor and a pop of color.

Enjoy: Serve the soup warm as a unique appetizer or a comforting main dish.
