Creamy Garlic Mushroom Pasta in 30 Minutes

8 oz (225g) spaghetti or fettuccine

2 tablespoons olive oil

4 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup (240ml) heavy cream

½ cup (50g) grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain the pasta and set aside.

    Sauté the Garlic and Mushrooms: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.

      Add the Mushrooms: Stir in the sliced mushrooms, thyme, and red pepper flakes. Season with salt and pepper. Cook for about 5-7 minutes, or until the mushrooms are tender and have released their liquid.

        Make it Creamy: Reduce the heat to low, then pour in the heavy cream. Stir well to combine, allowing the mixture to simmer gently for about 2-3 minutes until slightly thickened.

          Combine with Pasta: Add the cooked pasta to the skillet, tossing to coat it in the cream sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is achieved.

            Finish with Cheese: Stir in the grated Parmesan cheese until melted and mixed thoroughly into the sauce. Adjust seasoning with additional salt and pepper, if necessary.

              Serve: Once everything is combined, remove from heat. Garnish with fresh parsley before serving.
