Creamy Goat Cheese Pasta

12 oz pasta of your choice (fettuccine or penne work great)

4 oz creamy goat cheese

1 cup heavy cream

3 cloves garlic, minced

2 cups baby spinach

1/2 cup sun-dried tomatoes, chopped

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Crushed red pepper flakes for heat

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Cream: Lower the heat and pour in the heavy cream, stirring to combine with the garlic. Allow the cream to simmer for 2-3 minutes, stirring occasionally.

        Incorporate Goat Cheese: Add the creamy goat cheese to the skillet, stirring until the cheese is melted and the sauce is smooth.

          Mix in Spinach and Tomatoes: Stir in the baby spinach and sun-dried tomatoes, cooking until the spinach is wilted, around 2 minutes.

            Combine with Pasta: Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

              Season: Stir in the grated Parmesan, lemon juice, salt, and pepper. Taste and adjust seasoning as desired.

                Serve: Plate the pasta and garnish with fresh basil leaves and additional Parmesan cheese, if desired. For a spicy kick, sprinkle with crushed red pepper flakes.
