Creamy Jalapeño Chicken Casserole

2 cups cooked shredded chicken (rotisserie works great)

1 cup cooked white rice (or quinoa for a healthier twist)

1 can (10 oz) diced tomatoes with green chilies

1 can (10.5 oz) cream of chicken soup (or homemade)

1 cup sour cream

1 cup shredded cheddar cheese (plus more for topping)

1-2 fresh jalapeños, minced (remove seeds for less heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

1 tablespoon olive oil

Fresh cilantro, for garnish (optional)

Tortilla chips, for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Mixture: In a large mixing bowl, combine the cooked shredded chicken, cooked rice, diced tomatoes with green chilies, cream of chicken soup, sour cream, and shredded cheddar cheese. Mix well until all ingredients are evenly incorporated.

      Add Flavor: Stir in the minced jalapeños, garlic powder, onion powder, cumin, salt, and pepper. Taste and adjust seasoning as per your preference.

        Grease Casserole Dish: Lightly grease a 9x13 inch casserole dish with olive oil to prevent sticking.
