2 tablespoons olive oil

1 medium onion, chopped

2 garlic cloves, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 cup fresh basil leaves, packed

1 teaspoon sugar (optional, to balance acidity)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup heavy cream (or coconut milk for a dairy-free version)

Fresh basil leaves, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened and translucent. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth, stirring well to combine. If you're using sugar to balance the acidity, add it at this stage. Season with salt and black pepper.

      Simmer: Bring the soup to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 20 minutes to allow the flavors to meld together.

        Blend: After simmering, remove the pot from the heat. Add the fresh basil leaves, then use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender, blend it in batches, and return it to the pot.

          Make it Creamy: Stir in the heavy cream (or coconut milk if you're opting for a dairy-free version) and heat the soup gently over low heat for another 5 minutes. Adjust seasoning with more salt and pepper if needed.
