Creamy Mushroom and Goat Cheese Tarts

1 sheet of puff pastry, thawed

2 cups fresh mushrooms, sliced (such as cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 cup heavy cream

4 ounces goat cheese, crumbled

Salt and pepper to taste

1 egg, beaten (for egg wash)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to fit your tartlet pans. Cut into rounds or squares, and press into the bottoms and sides of the pans. Prick the bottoms with a fork to prevent puffing.

      Cook the Filling: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

        Add the Mushrooms: Mix in the sliced mushrooms and thyme, season with salt and pepper, and sauté until the mushrooms are tender and have released their moisture, about 7-10 minutes.
