500g fresh mushrooms (button, cremini, or a mix), sliced

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons unsalted butter

2 tablespoons olive oil

4 cups vegetable broth (or chicken broth)

1 cup heavy cream

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

1 tablespoon soy sauce (optional, for umami)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil and 2 tablespoons of butter over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.

    Add Garlic and Mushrooms: Stir in the minced garlic and cook for an additional minute. Then, add the sliced mushrooms to the pot. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.

      Incorporate Broth and Seasoning: Pour in the vegetable broth and add the thyme, salt, pepper, and soy sauce if using. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.

        Blend the Soup: After simmering, use an immersion blender to purée the soup until smooth. If you prefer a chunky texture, you can blend half of the soup and leave the rest as is. Alternatively, transfer the soup in batches to a blender if an immersion blender is not available.

          Add Cream: Return the blended soup to the pot (if using a blender) and stir in the heavy cream. Heat the soup over low heat until warm, ensuring it doesn’t boil. Adjust seasoning as needed.

            Finish and Serve: Stir in the remaining tablespoon of butter for extra creaminess if desired. Serve the soup in bowls, garnished with freshly chopped parsley.
