Creamy Pesto Gnocchi with Sun-Dried Tomatoes

1 lb (450g) potato gnocchi

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup sun-dried tomatoes, chopped (in oil preferred for extra flavor)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

2 cloves garlic, minced

1/4 tsp red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. Once they float to the surface (typically within 2-3 minutes), remove them with a slotted spoon and set aside on a plate. Reserve about 1/2 cup of the pasta water.

    Sauté the Aromatics: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant (but do not let it brown).

      Create the Creamy Sauce: Lower the heat to medium-low, and add the heavy cream to the skillet. Stir in the basil pesto, mixing well to combine. Allow the mixture to simmer gently for about 2-3 minutes, stirring occasionally.

        Add the Tomatoes and Cheese: Stir in the chopped sun-dried tomatoes and the grated Parmesan cheese. If you enjoy a little heat, add the red pepper flakes. Mix everything together until combined, and season with salt and pepper to taste.

          Combine Gnocchi with Sauce: Add the cooked gnocchi to the skillet, along with a splash of reserved pasta water to loosen the sauce, if needed. Gently toss to coat the gnocchi in the creamy pesto sauce.

            Finishing Touches: Allow the gnocchi to heat through for another minute in the sauce, then remove from heat. Taste and adjust seasoning if desired.
