Creamy Pumpkin Alfredo Sauce

1 cup pumpkin puree (canned or homemade)

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

¼ teaspoon nutmeg

¼ teaspoon ground cinnamon

Salt and black pepper to taste

1 pound fettuccine or your pasta of choice

Fresh parsley or sage for garnish (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set aside.

    Sauté the Garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Make the Sauce Base: Stir in the pumpkin puree to the skillet with the garlic, mixing well. Cook for another 2-3 minutes, allowing the flavors to meld.

        Add Cream & Spices: Reduce the heat to low and slowly pour in the heavy cream. Stir until well combined. Add the nutmeg, cinnamon, salt, and black pepper to taste. Let this mixture simmer gently for about 5-7 minutes, allowing it to thicken slightly.

          Incorporate the Cheese: Remove the skillet from the heat and mix in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Combine Pasta and Sauce: Add the cooked fettuccine directly into the sauce, tossing to coat the pasta evenly with the creamy pumpkin Alfredo.
