Creamy Pumpkin Pasta Sauce

2 cups pumpkin puree (canned or fresh)

1 cup heavy cream (or coconut milk for a dairy-free option)

1 small onion, finely chopped

3 cloves garlic, minced

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)

1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)

1 teaspoon dried thyme

1/2 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

1 pound pasta (fettuccine, penne, or your choice)

Fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

      Make the Sauce: Stir in the pumpkin puree, heavy cream (or coconut milk), dried sage, thyme, nutmeg, salt, and pepper. Let it simmer for 5-7 minutes, stirring occasionally, until heated through and slightly thickened.

        Add Cheese: Reduce the heat to low and gradually stir in the grated Parmesan cheese (or nutritional yeast). Continue to stir until the cheese is melted and incorporated into the sauce. If the sauce is too thick, you can whisk in some of the reserved pasta water until desired consistency is reached.

          Combine with Pasta: Add the cooked pasta to the skillet with the creamy pumpkin sauce. Toss to coat the pasta evenly, adding more pasta water if necessary to reach your desired creaminess.

            Serve: Plate the pasta and garnish with freshly chopped parsley. Sprinkle additional Parmesan cheese on top if desired.
