8 oz (about 2 cups) rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1/4 cup green onions, sliced

1 cup cooked and crumbled bacon or turkey bacon (optional)

1/2 cup shredded cheddar cheese

1 cup sour cream

1/4 cup mayonnaise

1 packet of ranch dressing mix

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to cool. Set aside.

    Prepare the Dressing: In a medium bowl, whisk together the sour cream, mayonnaise, ranch dressing mix, and dill until well combined. Season with salt and pepper to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, green onions, bacon (if using), and cheddar cheese.
