2 cups uncooked rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1 cup sweet corn (canned or cooked)

1/2 cup red onion, finely chopped

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (optional)

1 cup ranch dressing (store-bought or homemade)

1/2 cup sour cream

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
