1 head of garlic

2 tablespoons olive oil

Salt and pepper, to taste

12 ounces fettuccine pasta

1 cup heavy cream

1 cup freshly grated Parmesan cheese

3 tablespoons unsalted butter

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Optional: Crushed red pepper flakes (for a kick)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper. Wrap it in aluminum foil and roast in the oven for about 30-35 minutes, until the cloves are soft and golden. Allow it to cool, then squeeze the roasted garlic out of the skins and set aside.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Make the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Add the roasted garlic, mashing it slightly with a spatula. Pour in the heavy cream and bring it to a gentle simmer. Stir continuously for about 3-5 minutes.

        Add Cheese and Seasoning: Gradually whisk in the grated Parmesan cheese, continuing to stir until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency. Stir in the Italian seasoning, and season with additional salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked fettuccine pasta directly into the skillet with the Alfredo sauce. Toss to coat the pasta evenly, adding more pasta water if needed to create a silky texture.
