1 bulb of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup freshly squeezed lemon juice (about 1-2 lemons)

1/4 cup tahini

2 tablespoons olive oil (plus more for drizzling)

1/2 teaspoon ground cumin

1/2 teaspoon salt (adjust to taste)

2-3 tablespoons water (or more for desired consistency)

Fresh herbs (like parsley or cilantro) for garnish (optional)

Paprika or smoked paprika for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves. Drizzle with a little olive oil and wrap the bulb in aluminum foil. Roast in the oven for about 30-35 minutes, until the garlic is soft and caramelized. Let it cool slightly, then squeeze the roasted garlic cloves out of their skins into a bowl.

    Blend the Ingredients: In a food processor, combine the roasted garlic, chickpeas, lemon juice, tahini, olive oil, ground cumin, and salt. Process until well blended and smooth. Scrape down the sides of the bowl as needed.

      Adjust Consistency: While the food processor is running, add water, one tablespoon at a time, until you reach your desired creaminess. The hummus should be smooth and spreadable.

        Taste and Season: Taste the hummus and adjust the salt and lemon juice if needed, blending again to incorporate.

          Serve: Transfer the hummus to a serving bowl. Make a small well in the center and drizzle with olive oil. Garnish with fresh herbs and a sprinkle of paprika for an extra touch.
