Creamy Roasted Garlic Hummus

1 head of garlic

1 cup canned chickpeas (15 oz), drained and rinsed

¼ cup tahini

2 tablespoons fresh lemon juice

3 tablespoons extra-virgin olive oil, plus more for drizzling

½ teaspoon ground cumin

¼ teaspoon smoked paprika

Salt and black pepper to taste

3-4 tablespoons water (as needed)

Fresh parsley, for garnish

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic to expose the cloves. Drizzle with a touch of olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes until the cloves are soft and caramelized. Allow to cool slightly before using.

        Prepare the Hummus Base:

          - In a food processor, combine the chickpeas, tahini, lemon juice, ground cumin, and smoked paprika. Add a pinch of salt and pepper.

            Blend and Add Garlic:

              - Squeeze the roasted garlic cloves out of their skins and add them to the food processor.

                - Blend the mixture until smooth, scraping down the sides as needed.

                  Adjust Consistency:

                    - While blending, gradually add olive oil and water until you reach your desired creamy consistency. You may need to add more water or olive oil to get it perfectly smooth. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.

                      Serve:

                        - Transfer the hummus to a serving bowl, drizzle with additional olive oil, and sprinkle with fresh parsley and a sprinkle of smoked paprika for a pop of color.
