Creamy Roasted Pepper Penne

12 oz penne pasta

2 large red bell peppers, roasted and peeled

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

3 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Toasted pine nuts (for topping)

Roast the Peppers: Preheat your oven to 450°F (230°C). Cut the bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet. Roast for 20-25 minutes or until the skin is blackened. Remove from the oven, cover with foil, and let them steam for 10 minutes. Once cool enough to handle, peel off the skins and chop the peppers.

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

      Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the roasted, chopped peppers and cook for another 2-3 minutes, allowing their flavors to meld.

        Blend it Up: Transfer the pepper and garlic mixture to a blender (or use an immersion blender) and blend until smooth. Return the mixture to the skillet. Stir in the heavy cream and Parmesan cheese, mixing until combined. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.

          Combine Pasta and Sauce: Add the cooked penne to the skillet with the sauce. Toss everything together, ensuring the pasta is well coated. Season with red pepper flakes (if using), salt, and pepper to taste.

            Serve: Plate the creamy roasted pepper penne while hot, garnishing with fresh basil leaves and toasted pine nuts for added texture and flavor.
