Creamy Roasted Red Pepper Pasta

12 oz pasta (penne or fusilli)

2 large red bell peppers

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Roast the Peppers: Preheat the oven to 450°F (230°C). Cut the red bell peppers in half, remove the seeds and stems, and place them cut-side down on a baking sheet lined with parchment paper. Roast for 20-25 minutes or until the skin is charred and blistered. Remove from the oven and let cool. Once cooled, peel off the skin and roughly chop the peppers.

    Cook the Pasta: While the peppers are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Sauce: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Blend the Sauce: In a blender or food processor, combine the roasted red peppers, sautéed onions, garlic, heavy cream, smoked paprika, and salt and pepper. Blend until smooth and creamy.

          Combine Pasta and Sauce: Return the skillet to medium heat. Pour the blended sauce into the pan and add the cooked pasta, tossing to combine. If the sauce is too thick, gradually mix in the reserved pasta water until you reach the desired consistency.
