Ingredients

1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper to taste

1 cup cauliflower florets (fresh or frozen)

2 cloves garlic, minced

1 cup vegetable broth

1 cup unsweetened almond milk (or any preferred milk)

1/4 cup nutritional yeast (for a cheesy flavor)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

1/4 cup grated Parmesan cheese (optional, for non-vegan version)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Spaghetti Squash:

Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and remove the seeds. Drizzle with olive oil and season with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper. Roast for 40-45 minutes until tender.

      Cook the Cauliflower:

While the squash is roasting, steam the cauliflower florets until tender, about 5-7 minutes. You can use a steamer basket on the stovetop or microwave them with a little water in a covered bowl.

          Make the Alfredo Sauce:

In a blender, combine the steamed cauliflower, minced garlic, vegetable broth, almond milk, nutritional yeast, garlic powder, onion powder, nutmeg, and Parmesan (if using). Blend until smooth and creamy. Taste and adjust seasoning with salt and pepper.

              Shred the Squash:

Once the spaghetti squash is done, carefully scoop it out using a fork to create the spaghetti-like strands.

                  Combine and Serve:

In a large skillet over medium heat, add the spaghetti squash strands. Pour the Alfredo sauce over the top, stirring gently to combine. Warm through for about 2-3 minutes. Check for seasoning and adjust if necessary.

                      Garnish:

Serve your Creamy Spaghetti Squash Alfredo hot, garnished with chopped fresh parsley and extra Parmesan cheese if desired.
