8 oz fettuccine pasta

1 can (14 oz) artichoke hearts, drained and chopped

2 cups fresh spinach, roughly chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

½ cup cream cheese, softened

1 cup grated Parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant. Add the chopped artichoke hearts and spinach, stirring until the spinach wilts down (about 2-3 minutes).

      Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Add the softened cream cheese, stirring constantly until melted and fully incorporated into the cream.

        Add Cheese and Seasoning: Gradually stir in the grated Parmesan cheese until melted. Season the sauce with salt, black pepper, and red pepper flakes. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.

          Combine: Add the cooked fettuccine to the skillet, tossing to combine it evenly with the creamy spinach artichoke sauce. If needed, adjust seasoning or add more pasta water for a creamier texture.
