8 oz (225 g) penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

6 oz (170 g) fresh spinach (or 10 oz frozen, thawed and drained)

1 cup (240 ml) heavy cream

1 cup (100 g) grated Parmesan cheese

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon nutmeg (optional)

½ teaspoon red pepper flakes (optional for heat)

Fresh parsley or basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Spinach: If using fresh spinach, add it to the skillet and sauté until wilted (about 2-3 minutes). If using frozen spinach, ensure it's drained and then add it to the skillet, cooking until heated through.
