4 medium sweet potatoes

1 tablespoon olive oil

3 cloves garlic, minced

5 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup cream cheese, softened

1 cup shredded mozzarella cheese

½ teaspoon nutmeg

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional, for topping)

Fresh basil or parsley, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Roast the Sweet Potatoes: Rinse and dry the sweet potatoes. Pierce each potato several times with a fork and evenly rub them with olive oil. Place them on a baking sheet lined with parchment paper and roast for 45-60 minutes, or until they are tender when pierced with a fork.

      Sauté the Spinach: In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach, cooking until wilted (about 3-4 minutes). Remove from heat and set aside.

        Make the Creamy Filling: In a mixing bowl, combine the ricotta cheese, softened cream cheese, half of the shredded mozzarella, and nutmeg. Stir in the sautéed spinach, seasoning with salt and pepper to taste. Mix until well combined.

          Stuff the Sweet Potatoes: Once the sweet potatoes are cooked, allow them to cool slightly. Cut each potato in half lengthwise and scoop out a small portion of the flesh (save it for another use or discard). Fill each potato half generously with the creamy spinach mixture.
