Creamy Sun-Dried Tomato Penne Pasta

12 oz (340 g) penne pasta

1 cup sun-dried tomatoes in oil, drained and chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp red pepper flakes (adjust to taste)

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese for serving

Instructions
 

Cook the Penne Pasta:

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

      Prepare the Sauce:

        In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

          Add Sun-Dried Tomatoes:

            Toss in the chopped sun-dried tomatoes and red pepper flakes, cooking for another 2-3 minutes until they soften. Feel free to add more or less depending on how much flavor you desire.

              Make it Creamy:

                Pour in the heavy cream and whisk to combine. Allow the mixture to simmer for about 3-5 minutes, letting it thicken slightly.

                  Cheesy Goodness:

                    Stir in the grated Parmesan cheese and Italian seasoning. Mix well until the cheese is melted and the sauce is smooth. If the sauce becomes too thick, add reserved pasta water a little at a time until you reach your desired consistency.

                      Combine with Pasta:

                        Add the cooked penne pasta to the skillet, tossing to coat the pasta in the creamy sauce. Season with salt and pepper to taste.
