2 medium sweet potatoes (about 1 pound), peeled and cubed

2 cups elbow macaroni

1/2 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/2 cup cream cheese

1 cup milk (whole or 2%)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Sweet Potatoes: In a medium pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly before transferring to a blender.

    Blend into a Sauce: Add the cooked sweet potatoes, cream cheese, milk, garlic powder, onion powder, nutmeg, salt, and pepper into the blender. Blend until smooth and creamy. Adjust seasoning to taste.

      Cook the Pasta: In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and return to the pot.

        Combine Macaroni and Sauce: Pour the sweet potato sauce over the cooked macaroni in the pot. Add in the cheddar and mozzarella cheeses, stirring until everything is well coated and the cheese is melted.

          Prepare to Bake (Optional): If you desire a crunchy topping, preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish. Drizzle with olive oil and sprinkle breadcrumbs over the top.
