Creamy Tomato Spinach Penne

12 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, drained

1 cup fresh spinach, chopped

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes and Spinach: Stir in the drained diced tomatoes and chopped spinach. Cook for about 2-3 minutes, allowing the spinach to wilt and the tomatoes to heat through.

        Make the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the Italian seasoning and red pepper flakes. Let it simmer for about 3 minutes until the sauce thickens slightly.

          Combine Pasta and Sauce: Add the cooked penne to the skillet along with some reserved pasta water (start with 1/4 cup) to help the sauce adhere. Toss well to coat. If the sauce is too thick, gradually add more pasta water until desired consistency is reached.

            Season and Serve: Stir in the grated Parmesan cheese and season with salt and black pepper to taste. Cook for an additional 1-2 minutes until heated through.

              Garnish: Serve warm in bowls, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired.
