12 oz cheese tortellini (fresh or frozen)

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 can (8 oz) tomato sauce

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to the package instructions. Drain and set aside.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Prepare the Sauce: Stir in the diced tomatoes (with juices), tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper. Allow the mixture to simmer for 5-7 minutes, letting the flavors meld together.

          Combine Ingredients: Remove the skillet from heat and stir in the heavy cream, mixing until well combined. Add the cooked tortellini to the sauce, gently folding to coat every piece.

            Assemble in Baking Dish: Pour the tortellini mixture into a greased 9x13 inch baking dish. Spread it out evenly.

              Add Cheese Topping: Sprinkle the shredded mozzarella and grated parmesan cheese evenly over the top of the tortellini and sauce mixture.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and lightly golden.

                  Garnish and Serve: Remove from the oven and let it sit for 5 minutes. Garnish with fresh basil leaves if desired. Serve hot.
