Creamy Tortellini with Tomatoes

12 oz fresh cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juice)

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Tortellini: In a large pot of salted boiling water, cook the fresh tortellini according to package instructions until al dente, usually about 2-3 minutes. Drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once it's hot, add the minced garlic and sauté for about 30 seconds until fragrant, but not browned.

      Add Tomatoes and Spices: Stir in the diced tomatoes (with their juice), dried oregano, and red pepper flakes if using. Season with salt and pepper. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.

        Make it Creamy: Lower the heat and slowly stir in the heavy cream, mixing thoroughly. Cook for another 3-4 minutes until the sauce thickens slightly.

          Toss in Spinach and Tortellini: Add the chopped spinach to the sauce and stir until wilted, then gently fold in the cooked tortellini. Ensure all the tortellini are coated in the creamy tomato sauce.
