Creamy Tzatziki Chicken Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup plain Greek yogurt

1/2 cup cucumber, grated and excess moisture squeezed out

2 garlic cloves, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh lemon juice

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon ground cumin

Skewers (soaked in water if wooden)

Fresh lemon wedges and extra dill for garnish for serving

Instructions
 

Prepare the Tzatziki Sauce: In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Mix well until all ingredients are combined and creamy. Taste and adjust seasoning if necessary. Refrigerate for at least 30 minutes to let the flavors meld.

    Marinate the Chicken: In a separate bowl, add the cubed chicken, smoked paprika, cumin, and a pinch of salt and pepper. Toss to coat the chicken evenly with the spices. Pour half of the tzatziki sauce over the chicken and marinate for at least 30 minutes (or up to 2 hours) in the refrigerator to enhance flavor.

      Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. While it's heating, thread the marinated chicken onto the skewers, ensuring that they are snug but not packed too tightly for even cooking.

        Grill the Chicken: Once the grill is ready, place the skewers on it. Cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm with the remaining tzatziki sauce drizzled over the top or on the side for dipping. Garnish with fresh lemon wedges and extra dill for a burst of flavor.
