12 oz (340g) pasta of choice (fettuccine, penne, or spaghetti)

2 tablespoons olive oil

4 cloves garlic, minced

5 cups fresh spinach, roughly chopped

1 can (400ml) coconut milk (full fat for creaminess)

1 tablespoon nutritional yeast

1 tablespoon lemon juice

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Pinch of red pepper flakes (optional, for heat)

Fresh basil leaves for garnish

Vegan Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: Fill a large pot with water, bring to a boil, and season with salt. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain and set the pasta aside.

    Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant, taking care not to burn it.

      Add the Spinach: Stir in the chopped spinach and cook for 2-3 minutes until wilted, stirring frequently.

        Make the Creamy Sauce: Pour in the coconut milk and add the nutritional yeast, lemon juice, onion powder, garlic powder, salt, and pepper. Stir to combine and let it simmer for 5-7 minutes, allowing it to thicken slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss well to coat the pasta in the creamy spinach sauce. If the sauce is too thick, gradually add reserved pasta cooking water until you reach your desired consistency.

            Season and Serve: Taste and adjust seasoning with more salt, pepper, or red pepper flakes for added heat, if desired. Remove from heat and serve immediately.
