1 can (15 oz) chickpeas, drained and rinsed

1 small onion, roughly chopped

3 cloves garlic, minced

1/2 cup fresh parsley, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

2 tbsp flour (all-purpose or chickpea flour for gluten-free)

1 tbsp olive oil (for brushing)

4 whole grain or pita wraps

Fresh veggies for filling (e.g., lettuce, tomatoes, cucumbers)

Tahini sauce or your favorite dressing

Blend the Base: In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and cayenne pepper. Pulse until you have a coarse mixture. Avoid over-blending; it should hold together but not be a paste.

    Form the Falafel Balls: Transfer the mixture to a bowl, sprinkle the flour over the top, and mix until well combined. Using your hands, scoop about 2 tablespoons of the mixture and form into small balls or patties, about 1.5 inches in diameter.
