Crispy Baked Chicken Sandwiches

4 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

4 sandwich buns (brioche or whole wheat work well)

4 slices of cheese (cheddar or pepper jack)

Lettuce leaves

Tomato slices

Pickles (optional)

Dijon mustard or mayonnaise for spreading

Marinate the Chicken: In a large bowl, add the chicken breasts and pour in the buttermilk, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or up to overnight for extra tenderness.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.

      Prepare the Coatings: In a shallow dish, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. In a separate dish, place the panko breadcrumbs.

        Coat the Chicken: Remove chicken breasts from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture first, shaking off any excess, then dip into the panko breadcrumbs, pressing down to adhere well.

          Bake the Chicken: Lay the coated chicken breasts on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes until golden brown and the internal temperature reaches 165°F (74°C).

            Melt the Cheese: For the last 5 minutes of baking, place a slice of cheese on top of each chicken breast to melt.

              Assemble the Sandwiches: Toast the sandwich buns lightly in the oven for a few minutes if desired. Spread Dijon mustard or mayonnaise on the bottom half of each bun, then layer with lettuce, a cheesy chicken breast, tomato slices, and pickles if using. Top with the other half of the bun.

                Serve: Serve the sandwiches hot with a side of crispy fries or a fresh salad.
