Crispy Cajun Potato Wedges

4 large russet potatoes

3 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

Fresh parsley, chopped (for garnish)

Optional: sour cream or ranch dressing (for serving)

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

    Wash and scrub the russet potatoes thoroughly. Pat them dry, then cut each potato into wedges, about 1-inch thick. You should have approximately 8 wedges per potato.

      In a large bowl, combine the olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Mix well to form a marinade.

        Add the potato wedges to the bowl with the marinade. Toss gently until the wedges are evenly coated with the seasoning mixture.

          Arrange the coated potato wedges in a single layer on the prepared baking sheet, ensuring there’s space between each wedge to allow for even cooking and crispiness.

            Bake in the preheated oven for about 30-35 minutes, flipping the wedges halfway through the cooking time, until they are golden brown and crispy on the outside.

              Once done, remove the potato wedges from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley if desired.
