Crispy Charcuterie Tacos

8 small corn tortillas

1 cup cooked and crumbled chorizo

1 cup shredded rotisserie chicken

1 cup sliced salami

1 cup thinly sliced aged cheddar cheese

1 cup sliced provolone cheese

1/2 cup pickled jalapeños (adjust based on heat preference)

1/2 cup olives (black or green, pitted and sliced)

1/4 cup fresh parsley, finely chopped

1/4 cup sour cream

1/4 cup chimichurri sauce (store-bought or homemade)

Olive oil for frying

Salt to taste

Fresh lime wedges, for serving

Prepare the tortillas: In a skillet, heat a couple of tablespoons of olive oil over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until they are flexible but not crispy yet. Set them aside on a plate lined with paper towels to absorb excess oil.

    Create the filling: In a large mixing bowl, combine the crumbled chorizo, shredded rotisserie chicken, salami, and shredded cheeses. Mix until all ingredients are evenly coated.

      Assemble the tacos: Take each tortilla and spoon a generous amount of the charcuterie filling in the center. Fold the tortillas over to create a taco shape, pressing gently to hold them together.

        Fry the tacos: In the same skillet, add more olive oil as needed and increase the heat to medium-high. Carefully place the folded tacos into the skillet, cooking them in batches if necessary. Fry each taco for about 3-4 minutes on each side, or until golden brown and crispy. Drain excess oil on paper towels.

          Garnish and serve: Once all tacos are prepared, place them on a serving platter. Top each crispy taco with pickled jalapeños, olives, and a sprinkle of fresh parsley. Drizzle with chimichurri sauce and a dollop of sour cream.

            Finish with lime: Squeeze fresh lime juice over the tacos before serving for an extra zing!
