2 medium zucchinis, sliced into 1/4-inch rounds

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray (or for brushing)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easier cleanup.

    Prepare the Breading: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix until the ingredients are well combined.

      Prepare the Zucchini: Place the sliced zucchini rounds between paper towels to absorb excess moisture. Let them sit for about 10 minutes, then pat dry.

        Egg Wash: In a separate bowl, beat the egg until well combined. This will help the breading stick to the zucchini.

          Coat the Zucchini: Dip each zucchini round into the egg wash, letting any excess drip off. Then, coat it with the breadcrumb mixture, pressing gently to ensure that the mixture sticks well.

            Arrange on Baking Sheet: Place the breaded zucchini rounds in a single layer on the prepared baking sheet. Lightly spray or brush the tops with olive oil to enhance crispiness.
