Crispy Chicken Parmesan Bites

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably Italian-seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup marinara sauce (for dipping)

Fresh parsley, chopped (for garnish)

Olive oil spray or vegetable oil for frying

Prep the Chicken: Begin by taking your bite-sized chicken pieces and patting them dry with paper towels. This will help the coating adhere better.

    Set Up the Breading Station: In three shallow bowls, set up your breading station. In the first bowl, place the flour mixed with a pinch of salt and pepper. In the second bowl, pour the beaten eggs. In the third bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, basil, and an additional pinch of salt and pepper.

      Bread the Chicken: Working one piece at a time, coat each chicken piece in flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll it in the breadcrumb mixture, pressing lightly to ensure an even coating. Set the breaded chicken onto a baking sheet. Repeat for all chicken pieces.

        Preheat the Oven: While you’re preparing the chicken, preheat your oven to 400°F (200°C). If you're frying, heat about 1 inch of oil in a large skillet over medium-high heat.

          Fry the Chicken (Optional): If you choose to fry, carefully add the coated chicken bites to the hot oil, cooking in batches for about 3-4 minutes per side, or until golden brown and cooked through. Remove them with a slotted spoon and transfer them to a paper towel-lined plate to absorb any excess oil.

            Bake the Chicken: If not frying, spray the breaded chicken lightly with olive oil spray and place them on a parchment-lined baking sheet. Bake in the preheated oven for about 15-20 minutes, or until golden and crispy, flipping them halfway through for even cooking.
