Crispy Chickpea & Tomato Wraps

1 can (15 oz) chickpeas, rinsed and drained

1 tbsp olive oil

1 tsp smoked paprika

½ tsp garlic powder

½ tsp cumin

Salt and pepper to taste

1 cup cherry tomatoes, halved

¼ cup red onion, finely chopped

1 cup fresh spinach or mixed greens

4 whole-wheat wraps or tortillas

¼ cup hummus (store-bought or homemade)

Fresh lemon juice (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a mixing bowl, combine the rinsed and drained chickpeas, olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss gently until the chickpeas are evenly coated with the spices.

      Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until crispy, shaking the pan halfway through for even cooking.

        Prepare Vegetables: While the chickpeas are roasting, prepare the fresh vegetables. In a separate bowl, mix the halved cherry tomatoes and finely chopped red onion. Add a sprinkle of salt and a squeeze of lemon juice for flavor.

          Assemble Wraps: Once the chickpeas are done roasting and have cooled slightly, it’s time to assemble your wraps. Spread a generous tablespoon of hummus onto each wrap.

            Layer Ingredients: Top the hummus with a handful of fresh spinach, a spoonful of the tomato and onion mix, and then add the crispy chickpeas on top.
