2 lbs chicken wings

1 tablespoon baking powder (aluminum-free)

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried thyme

1 tablespoon olive oil

Optional: fresh parsley for garnish

Preheat the oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with aluminum foil and placing a wire rack on top. This will help the wings get crispy all around.

    Prepare the wings: If your wings are whole, separate them into drums and flats by cutting at the joints. Pat the wings dry with paper towels, which helps achieve that desired crispiness.

      Make the dry rub: In a large bowl, mix together the baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, and dried thyme. This blend will create a flavorful crust when baked.

        Coat the wings: Transfer the dried chicken wings into the bowl with the spice mix. Drizzle the olive oil over the wings and toss until they're thoroughly coated in the seasoning.

          Arrange on the baking sheet: Place the wings in a single layer on the wire rack, ensuring there's space between each wing for proper air circulation.
