Ingredients
  

1 cup dried chickpeas (soaked overnight in water)

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

Oil for frying (vegetable or olive oil)

4 whole wheat pita pockets

1 cup lettuce, shredded

1 medium tomato, diced

1 cucumber, diced

1/2 cup tahini sauce or yogurt sauce for serving

Instructions
 

Prepare the Chickpeas:

    - Drain the soaked chickpeas and rinse them under cold water. Pat them dry with a kitchen towel.

      Blend the Ingredients:

        - In a food processor, combine the drained chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking soda, salt, black pepper, and lemon juice. Pulse until the mixture is coarse but well combined, scraping down the sides as necessary.

          Shape the Falafels:

            - Transfer the falafel mixture to a bowl. Using your hands, form small balls or patties (about the size of a golf ball) and place them on a baking sheet lined with parchment paper.

              Fry the Falafels:

                - Heat about 1 inch of oil in a deep skillet over medium heat. Once hot (about 350°F), gently add the falafel balls in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove using a slotted spoon and drain on paper towels.
