Ingredients

4 large russet potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried rosemary

1 teaspoon dried thyme

½ teaspoon salt (more to taste)

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese for a cheesy twist

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

Prepare Potatoes: Wash and scrub the russet potatoes to remove dirt. Cut each potato in half lengthwise and then into wedges (about 8 wedges per potato).

Soak Potatoes: Soak the potato wedges in cold water for at least 30 minutes (or up to an hour). This step helps to remove excess starch, making the wedges crispier.

Drain and Dry: After soaking, drain the wedges and lay them out on a clean kitchen towel. Pat them dry to remove excess moisture.

Season the Wedges: In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, dried rosemary, dried thyme, salt, and black pepper. Toss the dried potato wedges in this mixture until they’re evenly coated.

Arrange on Baking Sheet: Line a large baking sheet with parchment paper (for easy cleanup). Spread the potato wedges in a single layer on the baking sheet, making sure they are not touching for even cooking.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 30-35 minutes. Flip the wedges halfway through to ensure they get crispy on all sides.

Check for Doneness: After 30-35 minutes, check if the wedges are golden brown and crispy. If desired, roast for an additional 5-10 minutes for extra crispiness.

Serve: Once done, remove the wedges from the oven and let them cool for a minute. If using, sprinkle grated Parmesan cheese over the hot wedges and garnish with fresh parsley.

Enjoy: Serve your crispy herb roasted potato wedges hot with your favorite dipping sauce (such as aioli, ketchup, or ranch dressing).
