2 large onions, sliced into rings

1 cup all-purpose flour

1 teaspoon garlic powder

½ teaspoon paprika

½ teaspoon salt

1 large egg

1 cup breadcrumbs (preferably panko for extra crunch)

2 cups shredded mozzarella cheese

4 slices of your favorite bread (sourdough, ciabatta, or white)

2 tablespoons olive oil

Fresh herbs for garnish (parsley or basil)

Optional: Marinara sauce for dipping

Prepare the Onions: Preheat your air fryer or oven to 400°F (200°C). Carefully separate the onion rings and set aside.

    Set Up Breading Station: In three separate bowls, prepare the coatings:

      - Bowl 1: Combine flour, garlic powder, paprika, and salt.

        - Bowl 2: Beat the egg until frothy.

          - Bowl 3: Place the breadcrumbs.

            Coat the Onion Rings: Dip each onion ring into the flour mixture, shaking off any excess. Next, dip into the egg, allowing excess to drip off, and then coat with breadcrumbs, pressing gently to adhere. Repeat with all onion rings.

              Air-Fry or Bake the Onion Rings: Place the coated onion rings in your air fryer basket or on a baking sheet. Lightly spray or brush them with olive oil. Cook for about 10-12 minutes in the air fryer or 15-20 minutes in the oven, flipping halfway through, until golden and crispy.

                Assemble the Melts: While the onion rings are cooking, heat a skillet over medium heat. Place a slice of bread in the skillet, top with a handful of mozzarella cheese, followed by 2-3 crispy onion rings, and another handful of cheese. Cover with a second slice of bread to create a sandwich.
