Crispy Mushroom Melt Wraps

2 cups of button mushrooms, finely chopped

1 cup of grated mozzarella cheese

1/2 cup of cream cheese, softened

1 tbsp of olive oil

2 cloves garlic, minced

1/2 tsp salt

1/2 tsp black pepper

1 tsp smoked paprika

1/4 cup grated Parmesan cheese

4 large tortillas (flour or whole wheat)

1/4 cup fresh parsley, chopped (for garnish)

Optional: Sriracha or hot sauce for serving

Instructions
 

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped mushrooms, salt, pepper, and smoked paprika. Cook for 5-7 minutes until the mushrooms are tender and any excess moisture evaporates. Remove from heat and let cool slightly.

    Prepare the Cheese Mixture: In a mixing bowl, combine the sautéed mushrooms with cream cheese and grated mozzarella cheese. Stir until well combined. For an extra kick, you can add some chopped jalapeños at this stage if desired.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous portion of the mushroom and cheese mixture onto the center of the tortilla. Sprinkle some Parmesan cheese on top. Fold in the sides of the tortilla and then roll it tightly from the bottom up to create a wrap.

        Crisp the Wraps: Wipe out the skillet and return it to medium heat. Place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side until golden and crispy. You may need to do this in batches depending on the size of your skillet.

          Serve and Garnish: Once crispy and golden, remove the wraps from the skillet and let them cool for a minute. Slice in half diagonally and garnish with chopped parsley. Serve with Sriracha or your favorite hot sauce for a spicy kick!
