Ingredients

1 can (14 oz) of artichoke hearts, drained and rinsed

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Olive oil for frying

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prep the Artichokes: Start by draining the artichoke hearts and gently patting them dry with a paper towel. This step is crucial to ensure they get crispy.

Set Up the Breading Station: In three separate shallow bowls, place the flour in the first bowl, beaten eggs in the second bowl, and mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in the third bowl.

Bread the Artichoke Hearts: Take each artichoke heart and coat it first in the flour, shaking off any excess. Next, dip it into the beaten eggs, and finally, coat it in the breadcrumb-Parmesan mixture, pressing gently so that the mixture sticks well.

Heat the Oil: In a large skillet, pour enough olive oil to cover the bottom of the pan (about ¼ inch). Heat the oil over medium-high heat. To test if the oil is hot enough, drop in a small piece of breadcrumb; it should sizzle immediately.

Fry the Artichokes: Once the oil is hot, carefully add the breaded artichoke hearts in batches, making sure not to overcrowd the pan. Fry each side for about 3-4 minutes or until they are golden brown and crispy. Use tongs to flip them halfway through for even cooking.

Drain and Serve: Once crispy, transfer the artichoke hearts to a plate lined with paper towels to drain excess oil. Sprinkle with a little extra salt if desired.

Garnish and Enjoy: Serve hot, garnished with fresh parsley and lemon wedges on the side for an extra zing. These crispy bites are perfect as an appetizer or a delightful snack!
