2 ripe avocados

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

2 large eggs

1 tablespoon water

Salt and black pepper to taste

Olive oil spray (or cooking oil of your choice)

Fresh parsley, chopped (for garnish)

Preheat and Prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and crispiness.

    Prepare the Avocados: Cut the avocados in half, remove the pit, and carefully scoop out the flesh. Cut each avocado half into wedges or fries, about 1/2 inch thick.

      Set up the Breading Station: In one bowl, whisk together the eggs and water to create an egg wash. In a separate bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, smoked paprika, cayenne pepper (if using), salt, and black pepper.
