Ingredients

2 ripe avocados

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Olive oil spray (or oil for frying)

Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

      Prepare the Avocados:

Cut the avocados in half, remove the pit, and carefully scoop out the flesh. Cut each half into wedges or fries, depending on your preference.

          Set Up Dredging Stations:

In three separate shallow bowls, set up your dredging stations:

              - In the first bowl, place the flour.

                - In the second bowl, beat the eggs until well mixed.

                  - In the third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

                    Coat the Avocado Fries:

Starting with the flour, coat each avocado wedge, shaking off any excess. Next, dip the floured wedge into the beaten eggs, allowing any excess to drip off. Finally, roll the avocado in the breadcrumb mixture until fully covered. Repeat until all wedges are coated.

                        Arrange and Spray:

Place the coated avocado fries in a single layer on the prepared baking sheet. Lightly spray the tops with olive oil spray to help achieve that golden, crispy finish.

                            Bake:

Bake in the preheated oven for about 15-20 minutes, or until the fries are golden brown and crispy, flipping them halfway through for even cooking.

                                Serve:

Once baked, remove from the oven and let cool for a few minutes. Serve warm with your favorite dipping sauce, such as ranch dressing or a spicy mayo.
