2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt (or to taste)

½ teaspoon black pepper

2 large eggs

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Rinse the zucchinis and slice them into thin rounds, about ¼ inch thick. Place the slices on a paper towel and sprinkle with a little salt. Let them sit for about 10 minutes to draw out excess moisture. Pat them dry with more paper towels.

      Create the Coating Mixture: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well to ensure even distribution of the seasonings.
