2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for drizzling

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easier cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them into sticks, about 1/4-inch thick, resembling fries. Try to keep them uniform for even cooking.

      Set Up the Breading Station: In three separate shallow bowls, set up your breading station:

        - In the first bowl, place the flour.

          - In the second bowl, beat the eggs until smooth.

            - In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

              Coat the Zucchini Fries:

                - Dip each zucchini stick first into the flour, ensuring it’s lightly coated, then shake off excess.

                  - Next, dip it into the beaten eggs, allowing the excess to drip off.

                    - Finally, coat it in the breadcrumb mixture, pressing gently to adhere. Place the coated zucchini fries on the prepared baking sheet.

                      Spray with Oil: Lightly spray or drizzle olive oil over the zucchini fries to help them crisp up in the oven.

                        Bake the Fries: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy. Keep an eye on them towards the end to avoid burning.
