Crispy Pita Nachos with Ranch Chicken

4 large whole wheat pitas

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon sea salt

1 teaspoon black pepper

2 cups cooked chicken, shredded

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1 cup cherry tomatoes, halved

1/2 cup red onion, finely diced

1/4 cup fresh cilantro, chopped

1 avocado, diced (for garnish)

Additional ranch dressing (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pitas: Cut each pita into 8 wedges. In a large mixing bowl, combine the olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Toss the pita wedges in the seasoned oil until fully coated.

      Bake the Pitas: Arrange the coated pita wedges in a single layer on a large baking sheet. Bake for 12-15 minutes, or until they are golden brown and crispy. Keep an eye on them to prevent burning.

        Mix the Chicken: In a separate bowl, mix the shredded chicken with the ranch dressing until well combined.

          Assemble the Nachos: Once the pita chips are done, remove them from the oven and immediately sprinkle half of the shredded cheddar cheese over the chips. Top with the ranch chicken mixture, followed by the remaining cheese.
