Crispy Shrimp Fajita Bowls

1 lb (450g) shrimp, peeled and deveined

1 cup bell peppers (red, yellow, and green), sliced

1 cup red onion, sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 cups cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 avocado, sliced

½ cup corn (fresh, frozen, or canned)

½ cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: sour cream, shredded cheese, salsa, jalapeños

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Add half of the olive oil, mixing well to coat the shrimp. Let it marinate for at least 15 minutes.

    Cook the Vegetables: In a large skillet, heat the remaining olive oil over medium heat. Add the sliced bell peppers and red onion. Sauté for 5-7 minutes until the vegetables are soft and beginning to caramelize. Remove from skillet and set aside.

      Crispy Shrimp: In the same skillet, add the marinated shrimp in a single layer. Cook the shrimp for 2-3 minutes on each side until they turn golden brown and opaque. You may need to do this in batches to prevent overcrowding the pan.

        Assemble the Bowls: In serving bowls, layer the cooked rice at the bottom. Top with black beans, sautéed vegetables, crispy shrimp, corn, and avocado slices.

          Garnish and Serve: Sprinkle chopped cilantro over the top and serve with lime wedges and any optional toppings you desire like sour cream or salsa.
