Crispy Smashed Baby Potatoes

1.5 lbs baby potatoes (Yukon Gold or red potatoes work well)

4 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

Zest of 1 lemon

Fresh parsley for garnish (optional)

Instructions
 

Boil the Potatoes: Place the baby potatoes in a large pot and cover them with water. Bring to a boil and let simmer for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.

    Preheat the Oven: While potatoes are cooling, preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper or a silicone baking mat.

      Smash the Potatoes: Once the potatoes are cool enough to handle, place them on the prepared baking sheet. Use a large flat object (like the bottom of a glass or a potato masher) to gently smash each potato until it’s about ½ inch thick.

        Prepare the Seasoning: In a small bowl, mix together olive oil, sea salt, black pepper, garlic powder, onion powder, smoked paprika, chopped rosemary, and lemon zest.

          Season the Potatoes: Drizzle the seasoning mixture over the smashed potatoes, ensuring each one is well-coated. Use a brush or your hands to evenly distribute the oil and spices.

            Bake to Crispy Perfection: Place the baking sheet in the preheated oven and bake for 25-30 minutes, turning the potatoes halfway through, until they are golden brown and crispy.
