Ingredients
  

1 block (14 oz) firm tofu, pressed and cubed

1 cup all-purpose flour (or gluten-free flour)

1 cup plant-based milk (such as almond or soy)

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon nutritional yeast (optional for a cheesy flavor)

Salt and pepper to taste

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons vegan butter

Fresh celery sticks and carrot sticks for serving

Fresh parsley or chives for garnish (optional)

Instructions
 

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap it in a clean towel and place a heavy object on top for about 15-20 minutes.

    Create the Breading Station: In one bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. In a second bowl, pour the plant-based milk. In a third bowl, place the panko breadcrumbs.

      Coat the Tofu: Cut the pressed tofu into bite-sized cubes. First, dip each cube into the flour mixture, shaking off excess. Next, dip it into the plant-based milk, then roll it in the panko breadcrumbs until fully coated. Repeat for all tofu cubes.

        Air Fry or Bake:

          - To air fry: Preheat the air fryer to 400°F (200°C). Spray the basket with cooking spray and arrange the tofu bites in a single layer (in batches if necessary). Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.

            - To bake: Preheat your oven to 425°F (220°C). Place the coated tofu on a parchment-lined baking tray and spray with a little cooking oil. Bake for 25-30 minutes, flipping halfway, until crispy and golden.

              Prepare the Buffalo Sauce: In a small saucepan, melt the vegan butter over low heat. Once melted, add the buffalo sauce and stir until well combined. You can adjust the spice level by adding more buffalo sauce or a dash of hot sauce if desired.

                Combine Tofu with Sauce: In a large mixing bowl, gently toss the crispy tofu bites with the buffalo sauce until evenly coated.

                  Serve: Plate the crispy vegan buffalo bites and serve immediately with fresh celery and carrot sticks. Garnish with chopped parsley or chives for an extra touch.
