12 large rice paper wrappers

200g ground pork (or shrimp)

100g vermicelli noodles, cooked

1 cup shredded carrots

1 cup fresh herbs (mint, basil, cilantro), chopped

1/2 cup mushrooms, finely chopped

2 cloves garlic, minced

1 tablespoon fish sauce

1 tablespoon soy sauce

1 teaspoon sugar

Salt and pepper to taste

Vegetable oil for frying

Prepare the Filling: In a large mixing bowl, combine ground pork (or shrimp), cooked vermicelli noodles, shredded carrots, chopped herbs, mushrooms, and garlic.

    Season the Mixture: Add fish sauce, soy sauce, sugar, salt, and pepper to the mixture. Mix well until all ingredients are evenly combined.

      Soak Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 5 seconds or until it softens. Lay it flat on a clean surface.

        Fill the Wrapper: Place 2-3 tablespoons of the filling near the bottom third of the wrapper. Fold the bottom over the filling, then fold in both sides and tightly roll it up, ensuring the filling remains secure. Repeat with remaining wrappers and filling.

          Heat the Oil: In a large skillet or deep frying pan, heat about 1 inch of vegetable oil over medium-high heat until it sizzles when a small piece of spring roll batter is dropped in.

            Fry the Spring Rolls: Carefully place the spring rolls in the hot oil, a few at a time, avoiding overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy.

              Drain Excess Oil: Remove the spring rolls using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
